1. 毕业设计(论文)的内容和要求

本次研究旨在研究出改良液态醋风味的新工艺,需要做到如下:通过查阅文献,了解实验相关仪器基本操作并掌握酵母摇瓶培养及上罐培养工艺,掌握在50L自吸式发酵罐中称重流加法批式酵母发酵工艺及发酵过程中酒精度、菌体浓度、残糖、溶氧、及温度控制方法。

酵母菌在好氧发酵中,由于供氧不足、比生长速率过大或碳源供给量高于酵母菌所能同化的速率,就会产乙醇等代谢副产物,对菌体生长产生抑制。

另外,在高密度大规模发酵中,大量泡沫的产生和不合理的使用消泡剂也会导致发酵失败。
