在中国市场上, 三文鱼的主要品种是大西洋鲑鱼(Salmo salar) 和虹鳟鱼 (Oncorhynchus mykiss) 。
从分类学上讲, 大西洋鲑鱼和虹鳟都属于鲑形目鲑科鱼中的鲑亚科 (Salmoniae) 。
