一、论文内容: 几丁质是一种天然的含氮多糖类生物高分子,在自然界中其含量仅次于纤维素,是一种丰富的可再生资源,广泛存在于节肢动物、软体动物、环节动物、腔肠动物、海藻、真菌和动物关节中。

几丁质酶可以将几丁质降解为N-乙酰氨基葡萄糖和几丁寡糖。

而氨基寡糖是一类由D-氨基葡萄糖或N-乙酰氨基葡萄糖之间通过糖苷键连接而成一种低聚糖(及其盐),聚合度(Degree of polymerization)般分布在2-10。
