沙丁鱼是硬骨鱼纲(Osteichthyes),鲱形目(Clupeiformes)中一大类食用鱼的统称。

根据联合国粮食及农业组织和世界卫生组织成立的国际食品法典委员会订立国际食品标准,世界上共有二十一种鱼类可以称做作沙丁鱼的鱼类,其中使用做广泛的是Sardina pilchardus。

罐装和干制沙丁鱼制品是一种很流行的即食类预包装产品,含有较丰富的叶酸、泛酸、烟酸、多种维生素及磷、钙、铁等矿物质,是高营养、低胆固醇、易被机体吸收的营养食品。
